Chicken tenders and French fries that are both baked in the oven, so they are healthy and easy to make! The campers loved this recipe….we could have made pounds of French fries and I don’t think they would have stopped eating them!!

Camp Merri-Mac Oven Fried Chicken Tenders
Ingredients:
12 chicken tenders (or 12 strips of chicken breast meat)
¼ cup milk
1 egg
1/3 cup parmesan cheese
1 cup Panko bread crumbs
1 teaspoon paprika
1 teaspoon parsley
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
Cooking spray

Directions:
Preheat oven to 425 degrees.
Line baking sheet with foil, spray generously with cooking spray.
Mix milk and egg together in medium sized bowl. Place chicken tenders in mixture.
Mix parmesan, Panko, paprika, parsley, salt, pepper, garlic powder, and onion powder in food process and reduce to fine crumb.
Pour crumb mixture into large Ziplock bag.
Place tenders, 3-4 at a time in crumb bag and shake. Remove from bag and place on baking sheet, touching.
When all tenders are on baking sheet, spray again generously with cooking spray.
Bake at 425 degrees for 15-20 minutes.
Serve with your favorite dipping sauce—ketchup, honey mustard, ranch….

Camp Merri-Mac Oven French Fries
Ingredients:
6 baking potatoes
1/3 cup canola oil
1 teaspoon salt
¼ teaspoon pepper
¼ teaspoon garlic powder
Cooking spray

Directions:
Preheat oven to 450 degrees. (NOTE: If you are cooking the chicken tenders and French fries at the same time, both can cook at 425…the fries may just take a little longer.)
Line baking sheet with foil, spray generously with cooking spray.
Partially peel potatoes, you don’t have to remove every bit of skin.
Cut potatoes into strips, no more than ¼ inch thick.
Place cut potatoes in microwave-safe bowl and cover with water.
Microwave on high for 5 minutes.
Remove potatoes from water and dry on paper towels.
Put oil, salt, pepper, and garlic powder in gallon plastic bag.
Put microwaved potatoes in oil and gently shake, coating with oil and seasonings.
Remove potatoes and place on foil lined baking sheet, not touching, spray generously with cooking spray.
Bake at 450 degrees for 15-20 minutes. CHECK after 10 minutes and flip over if necessary. Serve with your favorite dipping sauce—ketchup, honey mustard, ranch….
